Golden Millet Porridge

How awesome is it to start your day with a bowl of warm, comforting porridge? This recipe is a little different from what you may have grown up with. We have swapped the oats for millet and added a few Mediterranean-inspired ingredients. This Golden Millet Porridge is packed full of goodness, is nutrient dense and promotes many health benefits. Not only is it good for your health, it will also do wonders for your soul as it is the ultimate comfort breakfast meal.
INGREDIENTS
PORRIDGE:
1½ cups millet, uncooked
½ cup diced apple
½ cup diced butternut squash
3 cups milk of choice
2 cups water
½ tsp. ground cinnamon
¼ tsp. sea salt
TO SERVE:
2 tbsp. honey
¼ cup roughly chopped walnuts
¼ cup raisins
1 pinch ground cinnamon
INSTRUCTIONS
1. Combine all the porridge ingredients in a large saucepan and bring to a boil over low-medium heat.
2. Cover and reduce the heat, then allow to simmer until the liquid is absorbed, and the millet, squash and apple are tender, approximately 25 minutes.
3. To serve, divide the porridge among serving bowls. Drizzle with a little honey, a sprinkle of walnuts and raisins and a pinch of ground cinnamon. Feel free to also add a dash of milk if you wish.
