Goat Cheese Caprese

Creamy goat cheese smeared on toast is topped here with tangy tomatoes, Italian herbs, and rich balsamic glaze to create a delicious blend of flavors. INGREDIENTS

2 cups halved cherry tomatoes
1 tablespoon extra-virgin olive oil
1 tablespoon balsamic vinegar
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon Italian seasoning
¼ cup goat cheese
4 slices whole wheat bread, toasted
⅓ cup chopped fresh basil
1 tablespoon balsamic glaze

INSTRUCTIONS

1. Combine the cherry tomatoes, olive oil, balsamic vinegar, salt, pepper, and Italian seasoning, tossing to combine. Allow the mixture to sit for 10 minutes.
2. Smear 1 tbsp. of goat cheese onto each slice of toasted bread, then top with the tomato mixture as well as some of the juice from the mixture.
3. Garnish with basil, then drizzle the balsamic glaze over the top. Serve and enjoy!
