Ginger Plum Tart

A naturally sweet, spiced plum tart with a nutty, whole-grain crust and no refined sugar—perfect for a blood sugar-friendly dessert without sacrificing flavor.
Ingredients:
Crust
1 cup almond flour
½ cup whole wheat flour (adds fiber, or use all almond flour for keto)
1 tablespoon granulated monk fruit sweetener (or Swerve)
¼ teaspoon cinnamon
¼ teaspoon salt
3 tablespoons cold unsalted butter (cubed)
2 tablespoons cold water
Topping
1 large egg white
1 tablespoon water
1 teaspoon monk fruit sweetener or coconut sugar
1 tablespoon chopped almonds or pecans (optional, for crunch)
Filling
3½ cups sliced fresh plums (about 10 medium)
2 tablespoons granulated monk fruit sweetener (or erythritol-based alternative)
1 tablespoon tapioca starch or arrowroot powder (instead of cornstarch for better digestion)
2 teaspoons finely chopped crystallized ginger (or 1 teaspoon fresh grated ginger for lower sugar)
Zest of ½ an orange (adds brightness without sugar)
Instructions
1. Make the Crust (Healthier Alternative):
In a food processor, pulse almond flour, whole wheat flour, sweetener, cinnamon, and salt.
Add cold butter cubes, pulsing until the mixture resembles coarse crumbs.
Gradually add cold water, one tablespoon at a time, pulsing until a dough forms.
Shape into a disk, wrap in plastic, and chill for 15 minutes.
2. Assemble & Bake:
Preheat oven to 400°F. Roll out the chilled dough into a 12-inch circle on a parchment lined baking sheet.
In a bowl, toss plums with monk fruit sweetener, tapioca starch, and ginger.
Arrange on the crust, leaving a 2-inch border. Sprinkle with orange zest for brightness.
Gently fold the crust edges over the plums, pleating as you go.
Whisk together egg white & water, brushing over the crust. Sprinkle with monk fruit sweetener and chopped nuts for a light crunch.
Bake for 20-25 minutes, or until crust is golden brown and plums are bubbly.
Cool on a wire rack before serving warm or at room temperature.
