Garlic Shrimp
MAKES 2 SERVINGS
This is another one of those recipes that doesn’t take much time. Perfect for crammed days, Garlic Shrimp combines the savory flavors of butter and garlic, while adding a surprising zest with lemon juice, sriracha, and chili pepper flakes. If you’ve ever thought shrimp were boring, this dish will prove you wrong and keep you coming back for seconds.
INGREDIENTS
1 pound shrimp, peeled and deveined
1 teaspoon salt
1 teaspoon pepper
3 tablespoons butter, divided
1 tablespoon olive oil
4 garlic cloves, minced
1 teaspoon paprika
¼ cup fumet
1 tablespoon sriracha
1 teaspoon crushed red pepper flakes
1 tablespoon lemon juice
1 tablespoon fresh chopped parsley or cilantro
INSTRUCTIONS
1. Season the shrimp with the salt and pepper and set aside. Place a large nonstick skillet over medium heat and add 1 tablespoon of butter and the olive oil. Add the shrimp and sauté 1 minute. Add the minced garlic and paprika to the shrimp, stir to combine, and cook the shrimp for 1 minute. Then add the fumet and sriracha. Reduce the sauce for 1 minute, making sure not to overcook the shrimp.
2. Pour 1 tablespoon of the lemon juice over the top of the cooked shrimp. Remove the shrimp from heat, garnish with the parsley, lemon slices, and crushed red pepper. Serve with cauliflower rice or zucchini noodles.
