Garlic Beef with String Beans

The antioxidant-rich string beans add crunch and texture to this family favorite, which we serve weekly in our household. For a lunch loaded with vitamins, fiber, and protein, you just can’t go wrong with this recipe. It’s a satisfying meal whether you’re finishing your feeding period or breaking your fast!
INGREDIENTS
2 tablespoons extra-virgin olive oil
1 pound ground beef
1 large onion, chopped
1 green chili pepper, chopped
1 tablespoon salt
1 tablespoon black pepper
8 garlic cloves, chopped
1 (16-oz.) can crushed tomatoes
2¼ pounds string beans, cut into 1½-inch pieces
INSTRUCTIONS
1. Heat the olive oil in a deep skillet over medium-high heat.
2. Add the ground beef and cook for 5 minutes, stirring constantly and breaking the beef into smaller pieces.
3. Stir in the onions, chili pepper, salt, and pepper and cook for 5 minutes more.
4. Stir in the garlic and cook for 2 minutes, then add the crushed tomatoes and stir for 5 minutes.
5. Add the green beans, cover the skillet, and cook for 5 minutes.
6. Remove from the heat and allow to cool for 5 minutes before serving. Refrigerate leftovers in an airtight container for up to 3 days.
