Fruit Salad with Italian Ricotta
Serves: 6
This is no ordinary fruit salad. The addition of Italian ricotta balances the flavors perfectly. The walnuts also add a little texture, while the cranberries give a subtle but divine tang. This impressive breakfast dish is surprisingly simple to make and can be tossed together in no more than 10 minutes (with time to spare). If you need to eat on the run, you can simply assemble your salad in a mason jar to make it the perfect portable breakfast.
INGREDIENTS
2 large apples, cored and thinly sliced
2 large Nashi pears, cored and thinly sliced
1 cup fresh baby spinach leaves
⅓ cup dried cranberries
⅓ cup finely chopped walnuts
⅔ cup Italian ricotta
2½ tbsp. raw honey
½ tbsp. freshly squeezed lemon juice
½ tsp. ground cinnamon
INSTRUCTIONS
1. In a salad bowl, toss together the apples, pears, spinach, dried cranberries and walnuts.
2. In a separate bowl, whip together the Italian ricotta, honey, lemon juice and cinnamon. Add to the fruit mixture and toss to combine. Serve immediately.
