Frozen Chocolate Bananas
Serves: 8
One of my personal favorites for a late night snack, with 18g of protein and 21mg of Potassium it will be sure to satisfy!
INGREDIENTS
4 bananas
8 wooden craft sticks
⅓ cup almond butter
¼ cup dark chocolate
½ cup almonds, chopped
INSTRUCTIONS
1. Cut bananas in half. Insert a wooden craft stick into the bottom of each banana. Freeze the bananas on parchment-lined baking sheet for about 3 hours.
2. Spread the almond butter over each banana, then freeze for another hour.
3. Melt the chocolate in the top of a double boiler. Dip each banana into the chocolate. Spread the chopped almonds out on a plate and roll the chocolate-dipped bananas over the almonds to coat. Freeze again until the chocolate is firm, another 1–2 hours.
(Tip: substitute cashews or walnuts for the almonds)
