Feta & Artichoke Salad

INGREDIENTS
6 lettuce leaves, chopped
1 cup whole cherry tomatoes
1 cup canned marinated artichoke hearts, quartered
½ cup crumbled rennet-free feta cheese
¼ cup whole raw almonds
Juice of ½ lemon
1 tablespoon extra-virgin olive oil
1 teaspoon salt
½ teaspoon black pepper
INSTRUCTIONS
1. Place all the ingredients in a medium bowl and toss to combine.
2. Divide the salad between two serving bowls. Serve immediately
