EGG IN A(VOCADO) HOLE
Makes 4 servings
Baked eggs in avocados are a delicious and easy breakfast that increases your daily healthy fat intake. Change up the seasoning or serve with bacon and salsa for some added fun! Baked avocados don’t store well, so only make enough to eat immediately.
INGREDIENTS:
2 ripe avocados
4 large eggs
¼ teaspoon cracked black pepper
¼ teaspoon salt
INSTRUCTIONS:
1. Preheat the oven to 450°F.
2. Slice avocados lengthwise and remove pits. Using a spoon, widen the hole left by the pit until it is just big enough to hold one large egg. Place avocado halves in an 8-x-8-inch baking dish. Carefully crack one egg into each avocado half, then season with salt and pepper.
3. Bake until eggs are set to your taste: 8–12 minutes for softer eggs, or up to 15 minutes for harder yolks.
4. Serve immediately, topped with cheese, bacon, a pinch of seasoning mix, or a tablespoon or two of salsa, if desired.
