Dakos (Greek Bruschetta)

Dakos is just as delicious as its Italian counterpart, bruschetta! Crispy toasts topped with fresh tomatoes, salty feta, tangy olives, and earthy oregano create a mouth-watering combination that comes together in a snap. Topped with olive oil to soften the bite, these delights are best served with a crisp white wine.
INGREDIENTS
1 large tomato
4 Melba toast rounds
¼ cup crumbled rennet-free feta cheese
¼ cup sliced olives
½ teaspoon black pepper
½ teaspoon ground oregano
2 teaspoons extra-virgin olive oil
INSTRUCTIONS
1. Using the large holes of a box grater, grate the tomato into a strainer set over a bowl. Allow the grated tomatoes to sit for 10 minutes to drain. Discard the liquid or reserve for another use.
2. Spread the grated tomato on the toasts and top with the feta cheese and olives.
3. Sprinkle each toast with pepper and oregano, and drizzle with the olive oil. Serve and enjoy!
