Cucumber, Tomato & Za’atar Sandwich

The spice blend adds a Middle Eastern flair to this dish. Combined with fresh cucumbers and delicate mint leaves, it makes for a speedy recipe that will quickly become your go-to.
INGREDIENTS
2 tablespoons Jordanian or Lebanese za’atar
1½ teaspoons extra-virgin olive oil
1 (8-inch) whole wheat pita bread
1 medium cucumber, sliced
⅓ cup halved cherry tomatoes
4–6 whole fresh spearmint leaves
INSTRUCTIONS
1. Combine the za’atar and olive oil in a small bowl. Spread the mixture onto one side of the pita bread.
2. Add the cucumbers, cherry tomatoes, and spearmint leaves on the pita bread and roll into a burrito. Serve and enjoy!
