Crustless Quiche
MAKES 6 SERVINGS
You can use this basic quiche recipe to make endless variations. Try adding spinach, or replace the bacon with ham or sausage. Adding diced peppers or broccoli is also an easy way to boost the flavor; just add about ½ cup to the egg mixture.
INGREDIENTS
8 slices bacon
2 tablespoons butter
1 small onion, diced
1 tablespoon minced garlic
6 large eggs
¾ cup whipping cream
½ cup shredded Swiss cheese
½ cup shredded Jack cheese
INSTRCUTIONS
1. Preheat the oven to 375°F. Butter a 9-inch pie plate or an 8-inch-square baking dish.
2. In a large frying pan over medium-high heat, fry the bacon until crispy, about 6 minutes. Transfer to a paper towel-lined plate to cool, leaving the grease in the pan. When the bacon is cool, crumble it into small pieces.
3. Add the butter to the bacon grease and return the pan to the heat. Add the onion and garlic and sauté for 5 minutes, or until soft.
4. Whisk eggs in a large bowl. Use a slotted spoon to transfer the onion and garlic to the bowl, then add a teaspoon of the butter–bacon grease mixture. Pour in the cream and whisk until fully combined. Stir in the crumbled bacon and both cheeses, then pour into the prepared baking dish.
5. Bake for 20 minutes, or until the quiche is set. Let cool 10–15 minutes before serving.
