CREAMY KETO BROCCOLI SLAW

Potlucks can be a challenge when you’re eating Keto. This is a great recipe to bring—it’s served cold, everyone loves it, and you’ll be guaranteed a dish for yourself. As an added bonus, using a bag of pre-shredded broccoli slaw means it couldn’t be any easier!
INGREDIENTS:
1/3 cup sugar-free mayonnaise
1½ tablespoons cider vinegar
1 tablespoon olive oil
1 tablespoon Dijon mustard
2 tablespoons erythritol sweetener (such as Swerve)
1 teaspoon celery seed
Salt, to taste
Cracked black pepper, to taste
2 (14 oz.) bags of pre-shredded broccoli slaw
INSTRUCTIONS:
1. Whisk together mayonnaise, cider vinegar, olive oil, mustard, sweetener, celery seed, salt, and pepper.
2. Place broccoli slaw in a large bowl, pour dressing over the top and toss to coat. Serve chilled. Refrigerate in an airtight container for up to 4 days.
