Makes 4 servings
Here’s another classic recipe that’s Keto-friendly with the addition of even more creamy goodness. Whipping cream and cheese turn spinach into comfort food in just five minutes on the stovetop—it doesn’t get any better than that!
4 tablespoons butter
¼ cup sweet onion, finely chopped
3 garlic cloves, minced
1 (10-ounce) package frozen spinach, thawed and drained
½ cup whipping cream
½ cup Parmesan cheese, grated
¼ cup asiago cheese, grated
¼ teaspoon salt
¼ teaspoon cracked black pepper
1. Heat butter in a frying pan over medium-high heat. Add onions and garlic and cook, stirring, for 3 minutes. Squeeze excess water out of thawed spinach and add to the pan.
2. Pour in cream and slowly stir to combine. As the mixture warms, add both cheeses and stir gently until completely melted.
3. Add salt and pepper and serve.
