Cranberry Mandarin Orange Bread
Makes 10 servings
Cranberries and fresh mandarin oranges come together to form this moist and fluffy loaf. Best of all, it’s an effortless dessert that anyone can make. Bake this once and I guarantee it will be at the top of your dessert list. Serve it after dinner or with a cup of tea, and your loved ones will think you spent all day in the kitchen!
INGREDIENTS
2¾ cups all-purpose flour
2 teaspoons baking powder
1 teaspoon ground cardamom
½ teaspoon sea salt
¼ teaspoon baking soda
1¾ cups granulated sugar
¾ cup buttermilk
¾ cup Greek yogurt
½ cup extra-virgin olive oil
2 large eggs
2 cups dried cranberries
2 mandarin oranges, peeled and segmented
INSTRUCTIONS
1. Preheat oven to 350°F and coat a 9-×-5-inch loaf pan with non-stick spray, set aside.
2. Whisk together the flour, baking powder, cardamom, salt, and baking soda in a large bowl.
3. Whisk together the sugar, buttermilk, Greek yogurt, olive oil, and eggs in a separate medium bowl.
4. Make a well in the flour mixture and pour in the wet Ingredients, mixing just until incorporated.
5. Gently fold in the cranberries and mandarin oranges.
6. Pour the mixture into the prepared pan and bake for 35–40 minutes, until a skewer comes out clean.
7. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
8. Serve warm or at room temperature! Refrigerate leftovers in an airtight container for up to 3 days.
