CLASSIC SAUSAGE GRAVY
Makes 4 (½-cup) servings
The way to make your favorite gravy into a Keto-friendly dish is to add some extra good fat, and replace the flour with a thickener like xanthan gum. If you are using xanthan gum for the first time, keep in mind that less is more. Start with a minimal amount and increase the quantity little by little, to achieve your desired thickness.
INGREDIENTS
1 pound pork breakfast sausage, cooked and crumbled
¼ cup cream cheese, softened
2 tablespoons butter
1 cup heavy or whipping cream
½ teaspoon xanthan gum
½ teaspoon cracked black pepper
¼ teaspoon salt
INSTRUCTIONS
1. Combine sausage, cream cheese, and butter in a medium-sized frying pan over medium heat. Stir until smooth, then reduce the heat to low and add cream, xanthan gum, salt, and pepper. If you prefer a thicker texture, slowly add additional xanthan gum until desired thickness is achieved.
2. Cook, stirring, until sauce comes together and begins to thicken, 5–8 minutes, depending on your desired consistency. Serve over Gravy-Ready Biscuits (page 54).
