Classic Italian Bruschetta

Bruschetta is always a crowd-pleaser. This speedy recipe will leave your loved ones thinking you spent all day in the kitchen! The secret to perfect bruschetta is the bread; be sure to pick a crunchy, crusty loaf that the tomato mixture can soften with its delectable juices.
INGREDIENTS
1½ cups chopped ripe tomatoes
1 teaspoon salt
5 tablespoons extra-virgin olive oil
2 large garlic cloves, minced
8 large basil leaves, chopped
1 teaspoon black pepper
4 slices crusty whole wheat bread, toasted
INSTRUCTIONS
1. Place the tomatoes in a colander and place the colander into the sink.
2. Stir in the salt and allow the tomatoes to rest for 1–2 hours.
3. Combine the olive oil and garlic in a saucepan over medium-low heat and cook for 15 minutes or until the garlic softens and becomes fragrant. Set aside to cool.
4. Combine the garlic oil, tomatoes, basil, and pepper in a medium bowl.
5. Arrange the bread slices on a serving plate and top with the tomato mixture. Serve and enjoy!
