Cinnamon Swirl Coffee Cake

Moist and warmly spiced, this cinnamon swirl coffee cake brings cozy café vibes right to your kitchen. Made with almond flour and a touch of monk fruit sweetener, it’s a perfect diabetic-friendly option for brunch or an afternoon treat with tea or coffee.
Ingredients:
Cake Batter
1 ½ cups almond flour
2 tbsp coconut flour
1 tsp baking powder
¼ tsp salt
3 eggs
⅓ cup unsweetened almond milk
¼ cup melted butter or coconut oil
¼ cup monk fruit sweetener
1 tbsp vanilla extract
Cinnamon Swirl & Topping
2 tbsp monk fruit sweetener
2 tsp ground cinnamon
1 tbsp almond flour
1 tbsp melted butter
Instructions
1. Preheat: Preheat oven to 350°F (175°C). Grease or line an pan with parchment paper.
2. Whisk: In a large bowl, whisk together almond flour, coconut flour, baking powder, and salt.
3. Beat: In another bowl, beat eggs, almond milk, melted butter, monk fruit sweetener, and vanilla until smooth.
4. Combine Wet Ingredients: Stir wet ingredients into dry until fully combined. Pour half the batter into the prepared pan.
5. Mix: In a small bowl, mix together swirl ingredients (monk fruit, cinnamon, almond flour, and melted butter). Sprinkle half of it over the batter.
6. Swirl: Add remaining batter on top, then swirl in remaining cinnamon mixture with a knife.
7. Bake: Bake for 30–35 minutes, or until golden brown and a toothpick comes out clean.
8. Cool: Cool for 15 minutes before slicing and serving.
