Chocolate Quinoa Bowl

What’s better than starting your day with chocolate? In this brownie-esque bowl, protein-packed quinoa is flavored with cocoa and then enriched with juicy berries, sweet maple syrup, and earthy cinnamon. Treat your body right and try out this energizing breakfast recipe!
INGREDIENTS
1½ cups quinoa, rinsed and drained
1½ cups water
1 cup unsweetened almond milk
2 tablespoons maple syrup
½ teaspoon vanilla extract
½ tablespoon unsweetened cocoa powder
¼ teaspoon ground cinnamon
¼ teaspoon salt
¼ cup fresh berries
½ banana, sliced
2 ounces dairy-free dark chocolate chips
INSTRUCTIONS
1. Coat your Instant Pot with nonstick cooking spray. Combine the quinoa, water, almond milk, maple syrup, vanilla extract, cocoa powder, cinnamon, and salt in the Instant Pot. Stir thoroughly, until well combined.
2. Set the Instant Pot to non-venting, seal it with the lid, and cook on high for 1 minute.
3. Switch the Instant Pot to venting and allow the pressure to release naturally for 10 minutes, then switch to the quick-release function.
4. Remove the lid and fluff the chocolate quinoa with a fork. Divide between two serving bowls and top with the berries, banana, and dark chocolate.
