Chocolate Hummus
MAKES 4 SERVINGS
Hummus isn’t just an appetizer . . . it can be a dessert too! This Chocolate Hummus is the perfect light dessert, bringing any meal to a satisfying close. It’s creamy and fluffy, and best served with pita or cinnamon-sugar tortilla chips. As with other Mediterranean desserts, this hummus is a rich source of vitamins and minerals, improving digestion and aiding in weight management.
INGREDIENTS
1 (15-ounce) can chickpeas, rinsed and drained
¼ cup cocoa powder
4 tablespoons maple syrup
1 teaspoon cinnamon
1 teaspoon vanilla extract
Zest of 1 lemon
1–2 tablespoons water
INSTRUCTIONS
1. Combine the chickpeas, cocoa powder, maple syrup, cinnamon, vanilla extract, and lemon zest in a blender or food processor and purée until slightly smooth.
2. Add the water, 1 tablespoon at a time, and continue to purée until the hummus reaches the desired consistency.
3. Spoon into a serving dish and serve! Refrigerate leftovers in an airtight container for up to 3 days.
