Chocolate Chip Cookies
Makes: 2 dozen
Who said cookies can’t be healthy? 24% of your daily Calcium, 16% of your daily Iron! Just make sure you don’t eat them all in one night.
INGREDIENTS
2½ cups Swerve sugar replacement
1 cup olive oil
1 tbsp. vanilla extract
1 tsp. salt
1 large egg
2 cups flour
½ tsp. baking soda
2 cups unsweetened chocolate chips
INSTRUCTIONS
1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
2. Combine the Swerve, oil, vanilla extract and salt in a large bowl and mix until smooth. Mix in the egg. In a separate bowl, combine the flour and baking soda. Combine the wet and dry ingredients, then fold in the chocolate chips.
3. Form the dough into 1-inch balls and place them on the prepared baking sheets, pressing down slightly and leaving 1 inch between the cookies to allow them to expand.
4. Bake until the cookies are golden brown around the edges, about 10 minutes. Cool on a rack before serving.
