Chocolate Chia Pudding with Raspberries

Looking for a light snack high in Potassium? This Dark Chocolate Chia Pudding is just that!
INGREDIENTS
1½ cups almond milk
¼ cup dark chocolate chips
3 tbsp. chia seeds
¼ cup raspberries
¼ cup almonds
8 mint leaves (optional)
INSTRUCTIONS
Combine 1 cup of the almond milk and the chocolate chips in a pot over low heat. Stir to melt the chocolate slowly, making sure not to scald the milk. Stir in the remaining milk and let cool to room temperature. Pour the chocolate mixture into 4 serving glasses glass and fold in the chia seeds. Let stand for 15 minutes, then stir again. Cover and transfer to the refrigerator for at least 8 hours. When ready to serve, stir the chia seed mixture and top with the raspberries, almonds and mint leaves, if using.
