Chocolate Avocado Mousse
Makes 4 servings
Yes, you can make a delectable mousse with avocados! This creamy chocolaty treat is so good you won’t be able to tell it from the original. What’s more, its far healthier, vegan, and gluten-free. Thanks to the avocados, you’ll be a whole lot closer to achieving your daily intake of vitamins B and C, and omega-3s.
INGREDIENTS
2 large ripe avocados
¼ cup cocoa powder
¼ cup maple syrup
1 tablespoon coconut milk
1 teaspoon vanilla extract
1 teaspoon instant espresso powder
INSTRUCTIONS
1. Run a knife lengthwise around the perimeter of each avocado, twist it apart, and remove the pit. Scoop the flesh into a food processor’s bowl along with the rest of the Ingredients.
2. Process until smooth and creamy, scraping the sides of the bowl as necessary. Divide evenly into 4 dessert dishes and refrigerate for 30–60 minutes, until set.
3. Serve and enjoy! Refrigerate leftovers in an airtight container for up to 3 days.
