Chocolate Apricot Pudding
Makes 4 servings
Unlike traditional puddings, this one is free of eggs and dairy, and instead uses a secret ingredient—chia seeds. Chia seeds not only make this pudding vegan-friendly, they also boast fiber and protein, while thickening the pudding to the classic velvety consistency everyone loves.
INGREDIENTS
¾ cup chia seeds
¼ cup unsweetened cocoa powder
3 tablespoons stevia
2½ cups almond milk
1 teaspoon vanilla extract
¾ cup dried apricots, finely chopped and divided
INSTRUCTIONS
1. Whisk together the chia seeds, cocoa powder, and stevia in a large bowl.
2. Add the almond milk and vanilla extract, whisking until free of lumps. Once combined, stir in ½ cup of chopped apricots.
3. Cover the bowl with plastic wrap and refrigerate for 2 hours or overnight, until set.
4. To serve, stir the pudding and spoon into 4 serving dishes. Top each dish with the remaining ¼ cup of chopped apricots or any other fruit of your preference.
