Chickpea Salad

Makes: 1 large salad or 2 small salads (2 servings)

The perfect snack for movie night! High in Iron and Potassium and only takes a few minutes to make. Add some feta for some added texture.



For the salad:

1 can (15 oz.) chickpeas,
½ cup sun-dried tomatoes
½ cucumber, diced
½ cup diced red onion
½ cup sliced olives
¼ cup parsley, chopped
¼ cup crumbled feta cheese

For the dressing:

¼ cup olive oil
2 tbsp. red wine vinegar
½ tsp. cumin
salt and black pepper, to taste



1. Drain the can of chickpeas and transfer to a large bowl. Add the sun-dried tomatoes, cucumbers, onions, olives, parsley and feta cheese and stir to mix.
2. Combine all the dressing ingredients in a bowl. Refrigerate both the salad and the dressing for an hour before combining and serving.
