Chicken Souvlaki

The secret to souvlaki is that most of the work is in the prep, so you can prepare everything ahead of time and spend less than ten minutes actually cooking. This traditional Greek recipe, enriched with earthy herbs, sour lemon, and tangy tzatziki, is the perfect addition to any backyard barbeque.
INGREDIENTS
4 boneless, skinless chicken breasts, cut into 1-inch cubes
⅓ cup extra-virgin olive oil
2 tablespoons lemon juice
3 garlic cloves, minced
2 teaspoons dried oregano
1 teaspoon dried parsley
1 teaspoon sea salt
½ teaspoon black pepper
½ cup tzatziki sauce, to serve
INSTRUCTIONS
1. Combine the chicken, olive oil, lemon juice, garlic, oregano, parsley, salt, and pepper in a bowl and toss to combine.
2. Cover with plastic wrap and chill for a minimum of 30 minutes.
3. Heat your grill to medium-high and thread the chicken onto skewers.
4. Grill the chicken skewers for 3–4 minutes per side, until cooked through.
5. Place the chicken on a serving platter along with tzatziki sauce and pita bread, if desired. Serve immediately.
