Chicken Salad Wrap
MAKES 5 SERVINGS
I first had chicken salad with nuts and sour cream when I was in college, and it was a game-changer for me. These ingredients make a perfect chicken salad that is filled with healthy fats and is creamy and delicious. You can bake the chicken for this salad with a sweet and spicy Piri Piri spice or use your favorite rotisserie chicken from the grocery store.
INGREDIENTS
1½ pounds cold cooked chicken
½ cup sour cream
5 tablespoons sugar-free mayonnaise
3 tablespoons lemon juice
1 stalk celery, finely chopped
⅓ cup chopped walnuts
2 teaspoons chopped chives
¼ teaspoon garlic powder
10 lettuce leaves
INSTRUCTIONS
1. Cube the chilled chicken and place in a large serving bowl. Add all the remaining ingredients and stir until the chicken is fully coated.
2. Serve cold on the lettuce leaves or a wrap of your choice. Refrigerate and store for up to 3 days.
