Chicken Parmesan Meatballs
MAKES 2 SERVINGS
If you’re a cheese lover, this dish is for you! Chicken Parmesan Meatballs are a crowd winning twist on a classic. As opposed to lonesome ground beef meatballs, this recipe uses chicken, zucchini, and three types of cheese. In true Italian form, these meatballs are topped with marinara sauce for serving.
INGREDIENTS
14 ounces ground chicken
¾ cup shredded mozzarella cheese
⅔ cup shredded Parmesan cheese
1 zucchini, shredded
1 egg
2 teaspoons white onion, diced
2 teaspoons dried minced garlic
2 teaspoons dried basil
1 teaspoon salt
1 tablespoon ground pepper
1 cup marinara sauce
½ cup shredded cheddar cheese
INSTRUCTIONS
1. Preheat oven to 400°F. Grease a casserole dish with olive oil.
2. In a large bowl, combine all the Ingredients except for the marinara sauce and cheddar cheese, and mix thoroughly. Make about 24 meatballs and set apart.
3. In a skillet, add some olive oil and sear the meatballs. Place them in a casserole dish.
4. Bake in the oven for 20 minutes or until the meatballs are cooked through.
5. Remove from the oven and top with the sauce and cheese. Bake for another 10–15 minutes or until the cheese is melted. Serve hot.
