CHICKEN PARMESAN MEATBALLS

If you’re a cheese-lover, this dish is for you! Chicken Parmesan Meatballs is a crowd-winning twist on a classic. As opposed to lonesome ground beef meatballs, this recipe uses chicken, zucchini, and three types of cheese. In true Italian form, these meatballs are topped with marinara sauce for serving.
INGREDIENTS
14 ounces ground chicken
¾ cup mozzarella, shredded
2/3 cup parmesan, shredded
½ cup cheddar cheese
1 zucchini, shredded
1 egg
2 teaspoons onion, minced
2 teaspoons dried garlic, minced
2 teaspoons dried basil
1 teaspoon salt
2 bay leaves
1 tablespoon ground pepper
1 cup marinara sauce
INSTRUCTIONS
1. Preheat oven to 400°F. Grease a casserole dish with olive oil.
2. In a large bowl, combine all the ingredients except for the marinara sauce and cheddar cheese, and mix thoroughly. Make about 24 meatballs and set apart.
3. In a skillet, heat olive oil and sear the meatballs. Place them in a casserole dish.
4. Bake for 20 minutes or until the meatballs are cooked through.
5. Remove from the oven and top with the sauce and cheese. Bake for another 10–15 minutes or until the cheese is melted. Serve hot.
