Chicken and Broccoli Casserole (Keto Friendly)
MAKES 8 SERVINGS
This is a keto version of the recipe that used to be called Chicken Divan, which was made with canned cream soups and cream cheese. This version is just as creamy and decadent, but with lower sodium and without all the additives, keeping you healthy and happy!
INGREDIENTS
1 pound broccoli florets, steamed until just tender
2 cups seasoned shredded chicken
¼ cup chopped fresh basil
1 cup cream cheese
¾ cup whipping cream
½ cup milk
1 tablespoon Dijon mustard
1 teaspoon minced garlic
1 cup shredded cheddar cheese
INSTRUCTIONS
1. Preheat oven to 375°F. Butter a 9-by-13-inch baking dish.
2. Combine the broccoli, chicken, and basil leaves in a bowl. Set aside.
3. Combine the cream cheese, cream, and milk in a saucepan over low heat, for about 5 minutes. Whisk in the mustard and garlic until smooth. Pour the cheese sauce over the chicken and broccoli mixture and toss to fully coat. Spread the mixture into the prepared baking dish and cover with the shredded cheese.
4. Bake for 20–30 minutes, until hot throughout and the cheese has browned. Cool for 5 minutes then serve.
