CHICAGO-STYLE CHOPPED SALAD

When I’m anywhere near Chicago, I order this salad at the local hotdog joint and enjoy every crunchy, sweet, and sour bite. Make it at home and thrill your family with your copycat skills. You can add Keto-friendly elbow macaroni if you like, but note that this will increase your total carb intake—check the nutritional information on the package!
INGREDIENTS:
3 cups romaine lettuce, chopped
3 cups iceberg lettuce, chopped
2 cups cooked chicken, diced
1 cup cooked bacon, crumbled
2 fresh tomatoes, diced
1 cup sliced green onions
1 cup blue or gorgonzola cheese, crumbled
Chicago-Style Italian Dressing:
1/3 cup extra-virgin olive oil
¼ cup balsamic vinegar
2 tablespoons minced garlic
1 teaspoon erythritol sweetener (such as Swerve)
½ teaspoon dried oregano
Salt, to taste
Cracked black pepper, to taste
INSTRUCTIONS:
1. Combine both lettuces, the chicken, bacon, tomatoes, green onions, and cheese in a large serving bowl and toss to distribute evenly.
2. Combine all dressing ingredients and whisk vigorously to emulsify.
3. Serve salad with dressing on the side, or store dressing and salad in separate covered containers for up to 3 days.
