Cherry Pie Bars

These cherry pie bars deliver all the flavor of a classic cherry pie in an easy-to-make,
perfectly portioned bar. A buttery almond flour crust, tart cherry filling, and crumbly
topping make this a must-have dessert—without the sugar rush.
Ingredients:
Crust & Topping
1 ½ cups almond flour
¼ cup coconut flour
⅓ cup powdered monk fruit sweetener
¼ tsp salt
¼ cup melted butter
1 egg
1 tsp vanilla extract
Cherry Filling
1 ½ cups frozen or fresh cherries, pitted and halved
1 tbsp lemon juice
1 tbsp chia seeds (to thicken)
1–2 tbsp monk fruit sweetener, to taste
½ tsp vanilla extract
Instructions
1. Preheat: Preheat oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper.
2. Mix: In a bowl, mix all crust/topping ingredients until a dough forms. Reserve ⅓ of the mixture for the topping.
3. Bake: Press remaining dough into the bottom of the pan. Bake for 10 minutes, then set aside.
4. Simmer: Meanwhile, in a saucepan over medium heat, cook the cherries, lemon juice, and sweetener for 5–7 minutes until soft. Stir in chia seeds and vanilla and let thicken for 5 minutes. Cool slightly.
5. Top: Spread cherry mixture over the baked crust. Crumble the reserved dough on top.
6. Bake: Return to oven and bake for 20–25 minutes, or until golden brown on top.
7. Cool: Cool completely before slicing into bars.
