CHEESE CRACKERS
Makes 24 crackers
Any real snack aficionado needs crackers in their snack-food lineup. These crackers, made with almond flour and cheddar, are a good replacement for those little boxed orange squares that may tempt you. Grate the cheddar yourself from a block of cheese for the best results.
INGREDIENTS
1 cup cheddar cheese, grated
1 cup finely ground almond flour
¼ teaspoon salt
¼ teaspoon garlic powder
2 tablespoons water, as needed
INSTRUCTIONS
1. Preheat the oven to 350°F. Combine all ingredients, except water, in a food processor. Process until the mix becomes doughy. Add water as needed if mixture does not fully combine or is too dry.
2. Turn dough out onto a parchment paper–covered work surface. Top with another sheet of parchment and roll dough out between the sheets of parchment to about 1/16-inch thick. Thin equals crispy, so the thinner the better!
3. Remove the top sheet of parchment, and use a pizza cutter to score dough into 1-inch squares. Pick up parchment with scored dough and transfer to a baking sheet. Bake for 20 minutes, or until crackers begin to brown. Remove pan from the oven and allow to cool.
4. Break crackers apart along the scored lines and serve. Store and refrigerate in an airtight container for up to 6 days.
