Caramelized Pear with Gorgonzola

INGREDIENTS
2 tbsp. olive oil
1 ripe pear, cored and sliced
¼ cup gorgonzola cheese
¼ cup Natural Caramel Sauce (recipe follows)
3 tbsp. honey or agave
alfalfa sprouts (optional)
INSTRUCTIONS
Heat the olive oil in a pan over medium heat. Add the pear and cook until lightly browned, about 5–7 minutes. Add the gorgonzola cheese, gently stir and continue cooking until the cheese begins to melt, about 3–5 minutes. Divide the pear slices between 2 plates and garnish with the caramel sauce, honey and sprouts, if using.
