Caprese Breakfast Tart

Do you have a few mouths to feed at breakfast time? Or perhaps you’re hosting a special brunch? This Caprese Breakfast Tart is a wonderful option as a slice-and-share meal that everyone is going to love. The classic flavors of tomato, cheese and fresh basil work well together—so well, in fact, that there is no need to add to them or make the tart any more complicated—if it’s not broken, don’t fix it! This simple yet impressive breakfast dish can be served either hot or cold … either way, it will be gone before you know it.
INGREDIENTS
1 large sheet puff pastry
2 tbsp. olive oil
36 thin slices tomato
36 thin slices fresh buffalo-milk mozzarella
¼ cup freshly grated
Parmesan cheese
¼ cup torn fresh basil leaves
INSTRUCTIONS
1. Preheat the oven to 425°F. Line a baking sheet with nonstick paper.
2. Lay the puff pastry sheet out flat on the lined baking sheet. Lightly brush the pastry with 1 tablespoon of the olive oil throughout.
3. Lay out three rows of 12 tomato slices and 12 mozzarella cheese slices on the pastry, alternating as you go and overlapping slightly, ensuring you leave a ½-inch to 1-inch border around all sides.
4. Once all three rows are arranged, drizzle over the remaining tablespoon of olive oil and sprinkle with the Parmesan cheese.
5. Bake 30–35 minutes or until golden. 6. Remove from the oven and sprinkle with the fresh basil leaves. Slice and serve immediately.
