Broccoli & Pork Latkes

This meal has all the nutrients you could ask for, including fiber and antioxidants from the broccoli and protein from the pork. Crispy on the outside, soft on the inside, these latkes are the perfect recipe to use up any leftovers. If using leftover cooked meat instead of ground pork, just be sure to shred it first!
INGREDIENTS:
1 cup shredded broccoli
½ cup ground pork
3 tablespoons whole-wheat flour
1 tablespoon Italian seasoning
1 tablespoon dried dill
1 teaspoon salt 2 eggs, beaten
1 teaspoon extra-virgin olive oil
INSTRUCTIONS:
1. Combine the broccoli and pork in a mixing bowl, then add the flour, Italian seasoning, dill, and salt, mixing until combined.
2. Stir in the eggs, mixing until smooth.
3. Heat the olive oil in a skillet over medium-high heat.
4. Spoon ½ cup of the mixture per latke into the skillet and cook for 4 minutes on each side, or until golden.
5. Drain the latkes on paper towels, then serve!
