Boston Cream Pie

A classic dessert reimagined! This diabetic-friendly Boston Cream Pie layers fluffy vanilla cake with smooth, low-carb pastry cream and a rich chocolate glaze. It’s indulgent, satisfying, and perfect for special occasions—or any day that needs a little sweetness.
Ingredients:
Pastry Cream Filling
1 cup unsweetened almond milk
2 egg yolks
2 tbsp powdered monk fruit sweetener
1 tbsp coconut flour (or cornstarch)
½ tsp vanilla extract
Pinch of salt
Chocolate Glaze
½ cup sugar-free dark chocolate chips
2 tbsp heavy cream
1 tsp butter
Vanilla Cake
1 ½ cups almond flour
¼ cup coconut flour
1 tsp baking powder
¼ tsp salt
3 eggs
¼ cup unsweetened almond milk
¼ cup melted butter
⅓ cup monk fruit sweetener
1 tsp vanilla extract
Instructions
1. Make the cake:
Preheat oven to 350°F (175°C). Grease and line two 6-inch cake pans (or bake in one and slice in half).
In a bowl, whisk together almond flour, coconut flour, baking powder, and salt. In another bowl, whisk eggs, almond milk, melted butter, sweetener, and vanilla. Combine wet and dry mixtures and mix until smooth. Divide batter into pans and bake for 20–22 minutes, or until a toothpick comes out clean. Cool completely.
2. Make the pastry cream:
In a saucepan over medium heat, whisk egg yolks, sweetener, coconut flour, and salt. Slowly whisk in almond milk and stir constantly until thickened, about 5–7 minutes. Remove from heat and stir in vanilla extract. Let cool completely in the fridge.
3. Assemble:
Place one cake layer on a serving plate. Spread with chilled pastry cream. Top with the second cake layer.
4. Make the glaze:
Melt chocolate chips, cream, and butter in a double boiler or microwave. Stir until smooth. Pour over the top of the cake, letting it drip down the sides. Chill for 15–20
minutes to set.
