Beet Mango Ginger Smoothie
Makes 2 servings
The earthy flavor of beets merges with the sweetness of mangoes and a zing of spicy ginger, crafting this ridiculously healthy and undeniably delicious smoothie. If you’re in a crunch for time, whip this up for breakfast the night before. Just make sure you stir before serving!
INGREDIENTS
2 cups mango, diced
1½ cups almond milk, chilled
1 cup frozen blueberries
2 small beets, peeled and roughly chopped
2 carrots, peeled and roughly chopped
3 dates, pitted
2 tablespoons ginger, peeled and grated
INSTRUCTIONS
1. Combine all Ingredients in a blender and process until smooth.
2. Pour into two glasses to serve.
Note: If the smoothie is too thick, add more almond milk. If the smoothie is too thin, add more mangoes or blueberries, or try adding ice.
