Beef and Cabbage Skillet Dinner
MAKES 6 SERVINGS
Skillet dinners were all the rage when I was a child. Make this one using a small cabbage or grab a bag of shredded coleslaw mix to make it an even quicker dinner.
INGREDIENTS
1½ pounds extra lean ground beef
½ sweet onion, chopped
2 tablespoons minced garlic
1 small head cabbage, chopped
1 (8-ounce) can tomato sauce
½ cup canned tomatoes and green chilies
⅓ cup beef broth
¼ cup red wine vinegar
Salt, to taste
Cracked black pepper, to taste
INSTRUCTIONS
1. Combine the ground beef, onion, and garlic in a large, deep skillet over medium heat. Cook until the beef is browned, about 10–12 minutes. Drain off the grease, add all the remaining ingredients, and stir to mix thoroughly. Bring to a boil, then reduce the heat to medium, cover, and cook for 15 minutes.
2. Remove the lid and continue to simmer until the liquid has reduced and the cabbage is soft, 5–10 minutes more. Serve hot.
