BEEF AND CABBAGE SKILLET DINNER

Skillet dinners were all the rage when I was a child. Make this one using a small cabbage or grab a bag of shredded coleslaw mix to make it an even quicker dinner.
INGREDIENTS
1½ pounds ground beef
½ sweet onion, chopped
2 tablespoons garlic, minced
1 small head cabbage, chopped
1 (8-ounce) can tomato sauce
½ cup canned tomatoes and green chilies
1/3 cup beef broth
¼ cup red wine vinegar
Salt, to taste
Cracked black pepper, to taste
INSTRUCTIONS
1. Combine ground beef, onion, and garlic in a large, deep skillet over medium heat. Cook until beef is browned, about 10–12 minutes. Drain off grease, add all remaining ingredients, and stir to mix thoroughly. Bring to a boil, then reduce the heat to medium, cover, and cook for 15 minutes.
2. Remove the lid and continue to simmer until the liquid has reduced and cabbage is soft, 5–10 minutes more. Serve hot.
