Balsamic Chickpea Salad

This zesty salad has a lot to offer, with a range of textures and flavors including sweet balsamic vinegar, crunchy sesame seeds, fresh basil, and chewy chickpeas. This protein-packed dish is vegan-friendly and gluten-free, which makes it an excellent option for family gatherings!
INGREDIENTS
1 (15-oz.) can chickpeas, drained and rinsed
2 large tomatoes, chopped
1 carrot, grated
½ cup chopped cilantro leaves
1 tablespoon extra-virgin olive oil
1 tablespoon balsamic vinegar
1 teaspoon salt
10 basil leaves
2 tablespoons sesame seeds
1 teaspoon sunflower seeds
INSTRUCTIONS
1. Combine the chickpeas, tomatoes, carrot, cilantro, olive oil, vinegar, and salt in a serving bowl, tossing to combine.
2. Garnish with the basil leaves, sesame seeds, and sunflower seeds, then serve!
