Baked Vegetables & Mozzarella

Whoever said vegetarian dishes aren’t as delicious as their meat equivalents has clearly never tried this recipe! Few things are more mouth-watering than baked cheese on caramelized vegetables. High in protein and fiber, this meal will keep you feeling full all night long!
INGREDIENTS
2 cups cherry tomatoes
1 green bell pepper, sliced
½ cup thinly sliced red onion
½ cup pitted black olives
⅓ cup chopped parsley
3 garlic cloves, sliced
¼ teaspoon salt
¼ teaspoon pepper
3 tablespoons extra-virgin olive oil, divided
6 sprigs fresh thyme
3 sprigs fresh rosemary
8 ounces mozzarella, cut into thick slices
4 whole-wheat baguette slices, toasted
INSTRUCTIONS
1. Preheat the oven to 350°F and line a 7-x-10-inch baking sheet with parchment paper.
2. Combine the tomatoes, bell pepper, onion, olives, parsley, garlic, salt, pepper, and 1½ tablespoons of the olive oil in a medium bowl, mixing well. Transfer the mixture to the prepared baking sheet and place the thyme and rosemary on top.
3. Arrange the mozzarella slices on top, then drizzle the remaining 1½ tablespoons of olive oil over the mozzarella.
4. Bake for 25 minutes, until the cheese softens and has a spreadable consistency.
5. Remove from the oven and transfer to a serving dish. Serve with the toasted whole-wheat baguette slices.
