Avocado Seafood Wraps
Servings: 3
You won’t believe that these wraps come together in just fifteen minutes. Perfect for prepared-in-advance work lunches or for an al fresco summer appetizer, they feature tender shrimp, meaty crab, and creamy avocado, all perfectly spiced and swaddled in a warm tortilla.
INGREDIENTS
5 ounces shrimp, peeled and deveined
3 ounces crab meat, finely chopped
¼ cup heavy cream
1 teaspoon unsalted butter
¾ teaspoon ground coriander
½ teaspoon ground cayenne pepper
¼ teaspoon minced garlic
2 tablespoons plain Greek yogurt
3 (8-inch) whole-wheat tortillas
1 avocado, sliced
1 cucumber, sliced
2 tablespoons parsley, optional
INSTRUCTIONS
1. Combine the shrimp, crab meat, heavy cream, butter, garlic, coriander, and cayenne pepper in a large saucepan over medium-high heat. Cook for 5–6 minutes, stirring occasionally, until the shrimp is bright pink. Remove from the heat and set aside.
2. Spread the yogurt onto the tortillas.
3. Arrange the avocado and cucumber on the tortillas, then add the seafood mixture.
4. Roll the tortillas up over the filling, folding in the sides, and use a toothpick to prevent the filling from falling out. Serve immediately.
