Avocado Coconut Smoothie
Makes 2 servings
Avocados have a naturally creamy texture that transform smoothies into luxurious beverages. Drink this for breakfast and the healthy fats from the coconut milk and avocado will keep you satisfied until your next meal!
INGREDIENTS
1 cup coconut milk, chilled
¼ cup fresh mint leaves, chopped and loosely packed
½ avocado
3 celery stalks, roughly chopped
Juice of 1 lime
1 teaspoon linseed oil
INSTRUCTIONS
1. Combine all Ingredients, except linseed oil, in a blender and process until smooth.
2. Refrigerate for at least 30 minutes, until cool.
3. Pour into two glasses and top each with ½ teaspoon of linseed oil before serving.
