AVOCADO AND CHEESE SCRAMBLED EGGS
Makes 4 servings
Classic cheesy scrambled eggs pair perfectly with the creaminess of avocados. If you’re reducing the recipe to one or two servings, brush the cut side of the remaining avocado half with lemon juice and store covered in the fridge for tomorrow.
INGREDIENTS:
2 tablespoons olive oil
¼ cup green onions or chives, thinly sliced
6 large eggs
½ teaspoon salt
2 ounces sharp cheddar or goat cheese, crumbled
1 avocado, diced
INSTRUCTIONS:
1. Heat oil in a nonstick skillet over medium heat. Add green onions and sauté until soft, about 5 minutes.
2. Meanwhile, whisk eggs and salt together in a separate bowl. Add egg mixture to the pan and stir until just softly set, about 2 minutes. Reduce the temperature to low and fold cheese into the eggs, then cook 1 minute more, until the cheese has melted, and eggs are firm.
3. Divide eggs among serving dishes and top with diced avocado. Season with a pinch of your favorite spice blend.
