Authentic Greek Tzatziki

My love for Mediterranean food came from my Greek Yaya (grandmother), who handed this authentic tzatziki recipe down to me when I graduated from culinary school. While Yaya wasn’t fond of me printing it, she’s proud that a piece of our heritage can now be shared with the world! You can serve this tzatziki as a dip, a sauce, or as a side for grilled meats.
INGREDIENTS
1 medium cucumber, grated
2 cups plain Greek yogurt
1 garlic clove
1 tablespoon salt
3 tablespoons minced fresh dill
2 tablespoons minced fresh mint
1 teaspoon fresh lemon juice
1 teaspoon extra-virgin olive oil
¼ teaspoon ground sumac
INSTRUCTIONS
1. Wrap the grated cucumber in a piece cheesecloth and squeeze to remove the excess moisture.
2. Combine the Greek yogurt and the grated cucumber in a medium bowl, mixing well.
3. Place the garlic and salt in a mortar and crush with a pestle until a paste forms.
4. Add the garlic paste, mint, dill, and lemon juice to the cucumber yogurt mixture, stirring to combine.
5. Transfer to a serving bowl, drizzle with olive oil, and sprinkle with the sumac. Serve with fresh vegetables, chips, or pita bread, if desired.
