Apricot & Butter Toast

For those days when you need cheering up, this comforting breakfast is just the thing. It also makes an easy appetizer that pairs well with cheese-focused mains. While I’m partial to apricot, you can get playful and test out other jams—or better yet, use a homemade one!
INGREDIENTS
4 slices whole wheat bread, toasted
½ tablespoon butter, softened
¼ cup sugar-free apricot jam
INSTRUCTIONS
1. Spread some of the butter onto each slice of toast, then spread the apricot jam on top.
2. Cut each toast into two pieces. Serve and enjoy!
