Apple Cinnamon Turnovers

Golden, flaky pastry filled with warm, spiced apple filling—these diabetic-friendly turnovers bring bakery-style comfort without the sugar. They’re easy to make, great for fall, and even better with a cup of tea or coffee.
Ingredients:
Pastry
1 sheet low-carb puff pastry or keto fathead dough (homemade or storebought)
1 egg, beaten (for egg wash)
Optional Glaze
2 tbsp powdered monk fruit sweetener
1 tsp unsweetened almond milk
Dash of vanilla extract
Filling
2 medium apples, peeled and diced
1 tbsp butter
1 tsp lemon juice
1 tsp cinnamon
¼ tsp nutmeg
2 tbsp monk fruit sweetener
1 tsp vanilla extract
Instructions
1. Preheat: Preheat oven to 425°F (218°C). Line a baking sheet with parchment paper.
2. Simmer: In a skillet, melt butter and sauté apples, lemon juice, cinnamon, nutmeg, and sweetener over medium heat for 5–7 minutes until soft. Stir in vanilla and set aside to cool.
3. Prepare Pastry: Roll out your low-carb pastry and cut into 6 squares (or circles).
4. Place Filling: Spoon a few tablespoons of the apple mixture onto the center of each. Fold over to form a triangle or half-moon. Press edges with a fork to seal.
5. Add Egg Wash: Brush tops with egg wash. Bake for 20–25 minutes, or until golden and puffed.
6. Optional: Mix glaze ingredients and drizzle over cooled turnovers.
