Almond Olive Oil Shortbread Crackers
Makes 18–24 crackers
These Almond Olive Oil Shortbread Crackers may not be the prettiest treat you've ever laid your eyes on, but their taste more than Makes up for it. Bursting with a warm, nutty flavor, serve these crispy crackers with coffee or tea and you’ve got a relaxing evening to look forward to.
INGREDIENTS
1¼ cups almond flour
¾ cup all-purpose flour
¼ cup brown sugar
¼ cup superfine sugar
Zest of 1 orange
1 teaspoon kosher salt
1 teaspoon ground cinnamon
½ cup extra-virgin olive oil
1 teaspoon vanilla extract
INSTRUCTIONS
1. Preheat oven to 375°F and line the bottom of an 8-×-8-inch baking dish with parchment paper.
2. Whisk together the flours, sugars, orange zest, salt, and cinnamon.
3. Add the olive oil and vanilla extract, mixing well, until a crumbly dough forms.
4. Press dough into the prepared baking dish.
5. Bake for 20 minutes, until the dough starts to brown around the edges.
6. Remove from oven and immediately cut into 18–24 diamond-shaped crackers.
7. Cool crackers completely in the pan before serving. Refrigerate leftover crackers in an airtight container for up to 5 days.
