Almond Joy Layer Bars

Inspired by the classic candy bar, these Almond Joy Layer Bars bring together coconut, almonds, and chocolate in a chewy, satisfying slice. They’re no-fuss, rich in flavor, and low in sugar thanks to smart ingredient swaps.
Ingredients:
Crust Layer
1 ½ cups almond flour
¼ cup melted butter
2 tbsp powdered monk fruit sweetener
Pinch of salt
Coconut Layer
1 cup unsweetened shredded coconut
¼ cup monk fruit sweetener
2 tbsp coconut cream or heavy cream
1 egg white, lightly beaten
½ tsp vanilla extract
Topping
½ cup sugar-free dark chocolate chips
2 tbsp almonds, chopped or whole
1 tsp coconut oil (optional, for melting chocolate)
Instructions
1. Preheat: Preheat oven to 350°F (175°C). Line an 8x8-inch pan with parchment.
2. Make Crust: Mix almond flour, butter, sweetener, and salt. Press firmly into the pan. Bake for 8–10 minutes, then let cool slightly.
3. Make Coconut Layer: In a bowl, mix shredded coconut, sweetener, cream, egg white, and vanilla. Spread evenly over the crust.
4. Bake: Bake for 12–15 minutes, until coconut is just golden on the edges.
5. Make Topping: Melt chocolate chips with coconut oil (if using). Spread over the cooled coconut layer, then sprinkle with chopped almonds.
6. Chill: Chill until set, then slice into bars.
